Its interior and exterior are made of rigid, 20-gauge stainless steel to withstand common wear, and it has an integrated steel frame for added strength. Its magnetic-action door latch and heavy-duty hinge are attached to the internal frame for security. Good for catering, it can be transported on its 5-inch casters-two of which swivel and brake, and two of which are rigid.Designed to support user needs, the Vulcan VCH88 cook-and-hold oven is equipped with a digital LED display that provides the time, hold temperature, cook temperature, and cabinet temperature. Operators can adjust the knob controls to set the cooking time, cooking temperature, and holding temperature. It can be set as high as 350 degrees Fahrenheit for cooking temperatures and 250 degrees Fahrenheit for holding temperatures. Its insulated design helps retain heat for back-to-back use, and the integrated, low-speed fan assists with natural browning.
